Cowboy Steak Wrap
Here is another of Mark's favorite wrap ideas. The idea of mixing mayonnaise with
BBQ sauce may seem a little strange at first but try it and see if you don't like it.
Weekend Griller Tip:
This wrap can be used for a party but is better as a meal. It is somewhat messy and better to
eat whole -- burrito style. If you decide that it is too good not to share (it is!) and must take it to a
party, we suggest cutting your tortillas into halves and rolling smaller wraps instead of slicing larger ones.

Cowboy Steak Wrap
Ingredients:
- 1 ½ pounds boneless cooked Sirloin Steak, perpared with a good spicey
rub (see notes below)
- ½ cup good BBQ Sauce
- ½ cup Mayonnaise (The Weekend Grillers recommend the Southern favorite,
Duke's)
- 3 Tomatoes (Plum or Roma work best), cored, seeded and thinly sliced
- 1 small Onion, peeled and chopped
- ¼ pound Jalapeno Jack Cheese, grated (or Habanero Jack if you are feeling
adventurous)
- 6 eight-inch flour Tortillas
Directions:
- Carve the steak into thin slices.
- Mix the BBQ sauce and mayonnaise and spread a thin layer onto each
tortilla.
- Layer on the steak, tomatoes,onions and cheese.
- Roll as a burrito.
- Grill for two minutes or until lightly browned in skillet on stove top or over medium
heat on grill, turning ½ way through. Alternately, microwave for 30 seconds to melt cheese.
