To finish up your Mini Course on Competition BBQ, I have collected a couple of prize winning sauce recipes and a prize winning rub recipe for you.

The Biker's Easy BBQ Sauce

Ingredients

  • 1 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup molasses
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 1/4 cup chopped onion
  • 2 teaspoon cayenne pepper  
  • 1 tablespoon garlic powder
  • 1 teaspoon ground black pepper  
  • 1 (5.5 ounce) can tomato juice
  • 2 tablespoons liquid smoke flavoring


Directions

  1. Combine everything into a food processor or blender.
  2. Puree until smooth
  3. Transfer to a saucepan.
  4. Bring mixture to a boil.
  5. Reduce heat to low and simmer for about 1 hour to thicken.  


 Hogoholics Dry Rub

Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons salt
  • 1 tablespoon lemon peel
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon MSG
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon cayenne pepper
  • 1/2 tablespoon white pepper 

Directions

  1. Combine and mix well. 
  2. Store in an air-tight jar.

Andy's Award Winning BBQ Sauce, a.k.a UFO Social Club Barbecue Sauce 
From The Fearless Chef by Chef by Andy Husbands and Joe Yonan (Adams Media, 2004)

Ingredients:

Basic Barbecue Rub:

  • 2 Tablespoons granulated sugar
  • 2 Tablespoons brown sugar
  • 2 Tablespoons ground cumin
  • 2 Tablespoons chili powder
  • 2 Tablespoons salt
  • 2 Tablespoons freshly ground black pepper
  • 1 Tablespoon cayenne
  • 4 Tablespoons paprika

UFO Social Club Barbecue Sauce:

  • 2 Tablespoons vegetable oil
  • 1 large yellow onion, chopped
  • 1 (14.5-ounce) can tomato puree
  • 1 (14.5-ounce) can tomatoes, with juice
  • ½ cup white vinegar
  • 2 packed Tablespoons dark brown sugar
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon salt
  • 1 Tablespoon freshly cracked black pepper
  • 1 Tablespoon paprika
  • 1 Tablespoon chili powder
  • 2 Tablespoons molasses
  • ¼ cup Basic Barbecue Rub
  • ½ cup orange juice
  • 4 Tablespoons yellow mustard
  • 1 (12-ounce) bottle dark beer

Directions:

For Basic Barbecue Rub:

  1. Mix together all the ingredients thoroughly.

The rub will keep for several months stored in a cool, dark place in an airtight container.

For UFO Social Club Barbecue Sauce:

  1. Heat oil in large, heavy-bottomed saucepan over medium-high heat.
  2. Add the onion and sauté, stirring frequently, until golden brown, about 10 minutes.
  3. Add the remaining ingredients and bring to a boil.
  4. Reduce heat to very low and simmer gently for 2 hours.
  5. Stir the sauce occasionally, scraping the bottom of the pot to prevent scorching.
  6. Transfer the sauce to a food processor or blender and puree in 2 batches.
  7. Transfer to a clean glass jar and store for up to 7 to 10 days in the refrigerator. 

Don't forget -- if you want to ENTER a BBQ competition, you must be prepared.  There's a WHOLE lot more to it than just slapping a brisket on the grill.
